Recipe – Cranberry and Currant Sweet Loaf
This recipe is taken from One Hundred Bread Machine Recipes, by Vicki Smallwood, which is a truly brilliant bread recipe book that we use a lot. This loaf is very delicious and stays fresh for several days.

Place the following ingredients into your bread-maker pan:
1 cup tepid water
3 T honey
2 T butter, melted
½ tsp salt
2 ¼ cup white flour
1 cup wholemeal flour
1 tsp yeast
Put into your bread maker and select the ‘dough’ cycle. When the cycle is complete, transfer the dough to a floured surface and knead the cranberries and currants into the dough until evenly dispersed.
75 g dried cranberries
75 g currants
Divide the dough into 3 equal-sized portions and roll each piece into a long sausage measuring approximately 30.5cm long. Plait together the 3 lengths, pinching the ends together to seal them.
Place on a greased tray, cover and leave to rise in a warm place. When the dough has almost doubled in size lightly brush the plait with beaten egg.
Bake approx. 20-25 minutes, or until golden, at 200 C.
