Recipe – Apricot and Coconut Loaf


This recipe is a family favourite! A moist, dense loaf, perfect for the school or work lunchbox; and is very simple to make. Apricot and Coconut loaf is delicious by itself, or with a little bit of butter.

1 ½ cup white flour
¾ cup wholemeal flour
2 heaped tsp baking powder
2 cup coconut
1 heaped cup raw sugar
1 cup diced apricots
2 cup milk 

Mix all the dry ingredients and then add the milk. Put into a well greased loaf tin and pop into the Homewood!
Bake for approximately 55 minutes at 180 C.

Some variations that we’ve tried for a healthier loaf: 1/2ing the sugar; adding bran, nuts or sultanas; or increasing the wholemeal to white flour ratio.
