Recipe – Flour Tortillas/Wraps

These are delicious and will save you heaps of money – so much better than the bought ones too! I found this recipe on Operation Jam Jar and the great thing is you can stuff them with anything you want – chilli con carne, burrito chicken, prawns… what ever you are in the mood for! You can make lots at one time and freeze them for easy dinners.

2 cup flour (white or wholemeal)
1 ½ tsp baking powder
½ tsp salt
2 tsp oil
¾ cup lukewarm milk (skim or full fat)

Sieve into a large bowl the flour and baking powder. Mix the salt (if you like things saltier add 1 t), oil and milk and mix into the flour. Knead this dough for 2 minutes with floured hands.

Rest covered for 15 minutes. Form into 8 balls. Rest covered for 20 minutes (the resting gives elasticity).

Use a rolling pin to roll one of the balls into a circle using extra flour to stop it sticking – try not to over-roll or they will be tough. Brush off excess flour and cook for 30 seconds each side in a preheated fry pan (does not have to be oiled) on your stove top. Wrap in a cloth and repeat until all are done – you can roll the next one while the first one is cooking.

Serve immediately with chilli con carne or chicken pieces (mixed in burrito mix seasoning) and with fresh ingredients such as: sour cream, cheese, avocado, tomatoes, sprouts, spinach, tomato salsa…etc!

Best eaten immediately or frozen and then when you want to use thaw, wrap in foil and heat in oven. Never microwave as makes them chewy.
