Recipe – Lemon Honey


Life giving you lemons? Make Lemon Honey! Tired cliches aside, lemon honey is a good way to store lemons up for later use. It can be used as a spread on toast, or as a base for things like lemon tart.

2 cup sugar
110 g butter
4 eggs
4 lemons

Squeeze the lemons and grate the yellow part of the rind. Strain the juice to remove pips. Beat the eggs a little.
Mix everything in a pot, and simmer slowly until it’s thick. Do not boil!

Bottle while warm, and seal once cool.
