Recipe – Spinach and Dried Cranberry Salad
Just to show you that we don’t only eat food that has been roasted, baked, dried, fried, boiled, steamed or in any other way prepared with the help of our Homewood Stove, I thought I would put up a recipe for a simple and delicious salad. Added bonus: no wood stove required!

baby spinach (and/or any other baby greens you have growing)
250 g feta – cubed (see Penny’s homemade feta recipe coming soon)
1 cup dried cranberries – roughly chopped
1 cup pecans (or almonds or walnuts) – roughly chopped
1 red onion – thinly sliced
Vinaigrette (we really like using either a Raspberry Vinaigrette or a Balsamic Vinaigrette)
Combine all the ingredients shortly before serving.
